Pancakes on Thursday?

Lucian Truscott writes an article that may actually inspire me to attempt pancakes on a weekday morning. Of course we don't have a nonstick griddle, only a cast-iron one, but it is pretty well seasoned. Forty minutes is actually rather a lot of time to imagine having in the morning around here, and we'd need a little extra time to get the coffee going, but he does make it sound alarmingly managable. Maybe I'll split the difference and make them on a busy Saturday.

For my reference, once I get the nerve up: the recipe for "Mississippi Pancakes," which he swears are "thick, airy and light" and taste "truly homemade, like fresh baked bread or biscuits." I like the sound of that.
