Last night, we had lasagna made with fresh pasta, fresh tomato sauce, and fresh arugula and spinach. If I were really snappy, I would have made the cheese myself, but, well, I'm not. I can imagine a world in which I could almost make a lasagna entirely from super-scratch: tomatoes and basil and garlic and spinach I grew myself, ricotta and mozzarella cheese I made myself, pasta I made myself. But I'd still be a zillion miles away from true self-sufficiency: I'm not going to keep hens or cows (though I would like some miniature sheep to graze my roof for me!) and the days when I run my own grist mill are not coming any time soon. I think it's Eric Wagoner who I remember saying (on Metafilter?) that he was working his way up to a completely hand-made pizza, a truly excellent goal.
