Middle Eastern Goes Mediterranean

At lunch, I was moved to make a whole pot of mujadarrah, a basic and delicious combination of lentils, long-grain rice, and sauteed onions that seems to appear with minor variations in proportions and name everywhere from Cyprus to Pakistan. A recipe's worth, which used two cups of lentils (today I used half red and half green, which was nice) and one cup of rice, of course made a truly ridiculous quantity of food. So tonight we are having stuffed peppers, a nice homey dinner that I haven't made in years and years. Red peppers, thanks, not green, cut in half lengthwise and stuffed with a mixture of the mujadarrah and a little grated Spanish cheese that had long since lost its identifying information, with a little powdered chipotle sprinkled on top. Add a salad with olives and thinly sliced sweet onion, and maybe a bottle of wine (hope you get a chance to pick one up on the way home from work, Snark!) and we can kinda sorta pretend we're dining on a sunny Mediterranean island. If only we had a back patio and a blue, blue sea, we'd be all set.
