When I lived in Berkeley, we liked to make something we called "hippie rice." It contains, criterially: rice, vegetables (assorted), soy sauce, and grated cheese. The crucial factor that makes it hippie rice instead of ordinary fried rice is that it must be totally oblivious to any kind of cultural purity. It generally incorporates both an eclectic assortment of veggies as well both Asian spices and fresh Mediterranean-variety herbs. It is, as we like to say, very aloha amigo.
I hadn't made it in ages, but we had some rice left over from last night's highly mediocre Chinese takeout, and I was inspired. Tonight's version contained rice and soy sauce (of course), sweet onion, carrots, yellow pepper, red pepper, broccoli rabe, garlic, ginger, corn, sorrel, basil, and ground black pepper. Grated pecorino romano was served alongside. Mm, just like Berkeley used to taste.
