Pasta with onions and peppers

Tonight's dinner was a simple and decadent tangle of pasta, carmelized onions, and roast peppers. While I cooked the onions, which does take a long time, Snark read aloud from The Diamond in the Window, a fabulous children's book that everyone should read, post haste. With that and the glass of whiskey he kindly also provided, the prep time just sped right by.

FOR EACH DINER, YOU WILL NEED:
1 medium onion of any hue
1 whole roasted red pepper
1 Tbs. olive oil
1/4 lb. linguine

YOU WILL ALSO NEED:
salt
pepper
dash of vinegar
parmesan cheese

1. Slice the onion into 1/4" semicircles. Separate and sauté in the olive oil over medium-low heat, slowly, until they are golden and extremely soft. This will take about 45 minutes. Near the end of this time, bring the pasta water to a boil and begin the linguine.

2. Slice the peppers into narrow ribbons. Add these to the onions. Add salt, pepper, and a splash of vinegar. Remove from heat.

3. Drain the linguine and toss together with the onion mixture and some grated cheese. You should find that the proportion of onions to pasta is quite high. Eat.
