Last night, S. made a tremendous batch of Deborah Madison's mushroom stew (from Vegetarian Cooking for Everyone), augmented with dried chestnuts we reconstituted in boiling water. My mother gave us an enormous bag of these for Xmas of 2001, and we still have many left, despite the fact that we find them utterly delicious. They are so floury and savory-sweet, we should use them more often. If you run across some, I definitely recommend them--they are great in soups or stews.
I made mashed potatoes to go underneath the wonderful stew, and we stuffed ourselves silly. The stew recipe is one of the best things in that very good book. It is not quite as simple as some other recipes, but it makes plenty and is so very fine that it is well worth the trouble, which is more on the order of having many stages and taking a long time than being particularly difficult or fussy, anyhow. It would make a fantastic base for a vegetarian shepherd's pie.
