The other night I made a meal that made me very happy. Sometimes, I will hit on just the right combination of foods to make me feel both decedent and mysteriously healthy. I wish I made myself lunches that were similarly tasty and healthy. Instead I do things like eat an entire pack of ramen. (Today I discovered that the uncooked broken ramen bits left in the package are TOTALLY DELICIOUS.)
Anyway, this dinner. The first element was my favorite recipe from the aforementioned new Indian cookbook: stir-fried carrots with cumin and lime, which by great good fortune is available online at the author's website. It is really a winner, and I think it is at its best as a cold salad, after at least a couple of hours to let its flavors mingle. It is even better the next day, and leftovers will keep in the refrigerator nicely for three or four days. So I cleverly went to work on Sunday evening and made a full batch to pop in the fridge. We had the last of it as part this meal.
For the hot part of dinner, I made a batch of sauteed peppers -- one green, one yellow, one red -- and onions with cumin and fennel seeds and a little bit of canned chopped tomato. There were some good pepper juices that I didn't want to miss out on, so I also made eggs and rice to have underneath, using some brown rice I'd made in the rice cooker. These are about halfway between fried rice and scrambled eggs and a nice way to make a little rice go farther as well as being filling and good in their own right.
Blackberry limeade (from my second batch) washed it down.
