Chaat-style croquettes

There are a lot of traditional croquettes made with potatoes, which are delicious but not so compatible with the dietary needs of S. It turns out that cauliflower works very well, too, especially for croquettes that are highly spiced, like these. I suppose it is the attention of this very sort that they've received in the recent low-carb trend that has made cauliflower so much more expensive than it used to be, but it was on sale this week, so croquettes for us! They went very well with spicy mint chutney, but I think I'd like them even better with tamarind chutney. S. might disagree.

The cauliflower was cut into about six pieces, simmered, drained thoroughly, tossed in a hot pan to dry it out further, and mashed. Also in the mix: spinach, cilantro, minced serrano pepper, amchur (sour mango powder), garam masala, a little cayenne, and salt.

Pesty, I can't remember where I bought this amchur, but I'm pretty sure it's available at the Indian market on 193/University near New Hampshire, in the shopping center across the street from the one that Tiffin and Udupi Palace are in. You can also get it from ishopindian.com, which I've found to have good service and products -- that's where I get my curry leaves, which I haven't been able to find at the local markets I've been to.
