Super salad (with oven fries)

Today I was feeling lumpish and soft, so I felt it would be best to eat a lunch containing actual fresh green vegetables, which have not been featuring in my diet so much of late. One inspired trip to the co-op later, I put together what was possibly the tastiest salad I have ever made.

I took a smallish Yukon Gold potato, cut it into slender wedges, brushed them with olive oil, and arranged them on a baking sheet, then sprinkled rosemary and kosher salt over everything. While those were roasting away (at 425° F), I made a lovely bed of assorted mixed greens and scattered sugar snap peas over top. On top of these I put small pieces of mock duck (a very tasty thing, I swear--if you are a meat-eating type, dark meat of chicken or something would also do nicely, I'm sure).

Right before the potatoes were ready, I dressed the salad with a simple vinegrette laced with tamari, and sprinkled sesame seeds over everything. Then the nice crispy potatoes went on top. They warmed the mock duck and did not quite wilt the greens or peas; the heat just took a tiny bit of the edge off them. The result was so tasty I could easily have eaten it several times over, but it was actually quite satisfying, too, so I wasn't too sad not to eat it all over again, either. Really, this lunch was just a success from top to bottom. Hurrah!
