Sorry to have been gone for so long -- that's the way of studying for exams, it appears. In the meantime, here is a recipe for brownies. I am slightly embarrassed by it, because it is not my usual way to cook with this or that substitution, but alas, the foibles of the human body bring us to some unforeseen places.
This recipe was given to me by the lovely Mollie, and the resultant treats should be good for a certain someone's diabetic diet. They DO NOT TASTE in any way fake, creepy, or weird. Though they feature some (naturally, for this is the way of the world, more expensive and hard-to-find) replacements for ordinary brownie ingredients, there are no nasty chemicals involved. We will be monitoring the situation to see if they are as fine for the blood sugar as they claim to be -- I'll report back for those who care.
INGREDIENTS
2 eggs
1 cup Whey Low
1/2 t vanilla
1/2 cup butter, melted
1/4 cup almond flour
1/4 cup wheat gluten
1/3 cup cocoa
1/4 t baking powder
1/4 t salt
1/2 cup chopped nuts, if you like
TO DO
Grease one 8" square pan. Beat eggs. Gradually add sugar and vanilla. Beat well. Blend in melted butter. Combine dry ingredients, aside from nuts. Gradually add dry ingredients to egg mixture, blending thoroughly. Stir in nuts, if you're using them. Pour into pan and bake at 350° for 30-35 minutes.

S. had one brownie -- a ninth of an 8" pan, and here were his blood glucose readings:
Starting blood sugar*: 110
30 min after eating: 115
60 min after eating: 109
90 min after eating: 110
120 min after eating: 106
So quite a success.
*About 2 hours after lunch, before eating the brownie.
