I invented a wonderful, wonderful thing tonight.
Tonight we ate this alongside a much more elaborate and time-consuming main dish, which was quite tasty in its own right, but this dish was the thing that made S. say, "This is really, really good. You have to make this a lot. Promise."
1/3 c. green lentils
1/4 c. roasted, unsalted peanuts, chopped roughly (pieces as big as halves are fine)
3 T. Thai fried onions in a jar
1/4 t. salt
water to cover
Take all ingredients but 1 T. of the onions and put 'em in a little saucepan. Cover. Bring to a boil, then lower to a simmer. Cook until lentils are completely tender, about 20 minutes, adding water if necessary. The end result should be moist but not at all soupy. Stir in the remaining onions and serve.
This is a lovely sidedish, somehow both homey and exotic. It is a surprisingly good accompaniment to Thai or Chinese food, and I think it would be good with Mediterranean food too, despite the fact that peanuts are of course not usually part of that cuisine. It's sure to be good with Southern American food, and if it sounds weird to you, just remember that peanuts are legumes too.
