This is this week's first recipe for REALLY EASY FOOD THAT IS REALLY REALLY GOOD. (Yes, that means there's another coming.) If you had told my fifteen-year-old self that I would adore broccoli and crave it madly, she would have been skeptical, to say the least. But there it is. This is a wonderful way to prepare broccoli. It's possible for me because we've begun buying absurdly large bags of pine nuts at Costco. At first you think "how will I ever use up all these pine nuts?" but soon you realize that actually you need to buy more, stat.
I made this when we were last in Providence, and even our friend K. who is heroically trying to overcome a lifelong vegetable aversion seemed to genuinely enjoy eating it. Everyone else was effusive. I myself was embarrassingly incapable of refraining from having thirds.
BROCCOLI WITH PINE NUTS
1. Take broccoli and cut up the florets as you like them, peel the stems and cut up, and steam or boil as you prefer until crisp-tender.
2. In a big pan, saute one or two chopped onions slowly until they are golden.
3. Meanwhile, toast a handful or two of pine nuts.
4. When onion is ready, add a clove or two of minced garlic and your salt.
5. Add the broccoli and heat through with the onion, stirring to coat. Add the pine nuts and plenty of pepper.
