Those eggs

For the pasta recipe below, I like to poach the eggs. If poaching isn't your thing, you can always fry them (crispy edges, yum), or, easiest yet, bake them. It takes a bit longer, but you don't have to do anything in that time but wait. To bake a pair of eggs, butter a small baking dish or ramekin, break the eggs into it, and pop the dish into the (conveniently preheated) oven. Let bake until the whites are set but the yolks are runny, about 15 minutes. Check on them to make sure you catch them before the yolks firm up.
